Soy (Glicine max) is the most important oilseed worldwide. According to the CONAB Bulletin of the 19/20 harvest, the areas cultivated with the crop reached 36,949.8 hectares, a production of 124,844.5 tons and an average productivity of 3,379 kg / ha. This demonstrates how important its cultivation has been for both the economy and the world food with its caloric-protein potential.

 

Its nutritional competence demonstrates several advantages, such as the oilseed that has more protein in its composition, presenting an average of 40%, according to national cultivars. In addition to being the vegetable that contains all the essential amino acids in perfect proportions for food.
